But chicken wings didn’t always have the rule of the roost in American bars and restaurants, or at weekend BBQs and sporting events. In fact, they used to be considered scraps that were tossed out with the garbage.
The Rise of the Chicken Wing
As the story goes, the first buffalo wings were served at the Anchor Bar in Buffalo, New York—hence the name. One momentous evening in 1964, Teressa Bellissimo, co-owner of the Anchor Bar, cooked up some leftover wings in hot sauce and served them as a late-night snack to her son and his friends, who had been partying a little too much. The boys loved the wings so much that they were added to the menu and soon became a hit at the restaurant.
For many years buffalo wings were a regional favorite in New York and surrounding areas. But in the 1980s the tastiness of this dish could not be kept from the rest of America, and it spread across the country.
Why do We Love Chicken Wings and Sports Together?
In the 60s and 70s it was common to buy a whole bird and cook it. In the 80s consumers’ habits changed, and they began to prefer buying boneless and skinless chicken meat. This left quite a bit of the chicken to be sold as extra parts.
When bar and restaurant owners realized they could get these wings for a fraction of the cost, deep fry them, slather them in hot sauce and sell them for a profit, Buffalo wings became a staple in every bar. And these hot wings had another added benefit—their spicy sauce caused beer sales to go through the roof.
With the advancement of technology in the 80s and 90s, sports bars were becoming popular for viewing the big games with friends and foes alike. Since wings are easily shareable and affordable, it made them a great snack to indulge in while cheering for your favorite team.
